I’m on a constant hunt for awesome vegetarian dinner ideas. Normally when I’m pulling together recipes and dishes to create my weekly menus, I try to incorporate one more indulgent or starchy dish with something healthier like green vegetables. That’s what I did here.
Kristin from Iowa Girl Eats is one of my favorite food bloggers. She is always coming up with fantastic new recipes that are so creative! She often takes favorite flavors and uses them in an unusual way, like with this recipe!
French Onion Soup Potstickers
(with roasted Brussels sprouts)


In order to make this recipe vegetarian, use vegetable broth instead of beef broth!
After making this recipe, I was shocked at how easy they were! The name ‘potstickers’ sounds so tricky. Is it going to ruin my frying pan? How are they so crunchy and so soft at the same time? What’s the filling? I always had this impression of potstickers as a complicated dish, but not so! They were surprisingly simple, now don’t mistake that for quick, it took a while to put them together but they were simple! I also did just what Kristin suggested and frozen half the batch.

This looks AMAZEBALLS (as Guiliana Rancic would say). Are you sure they aren’t complicated? I need to give them a whirl. I want those brussel sprouts too!
They were amazing (or amazeballs as you say)! The Roommate keeps mentioning how delicious the potstickers were with the Brussels sprouts.
As far as the recipe goes, the steps aren’t complicated, but it’s not a quick dish to throw together. So if you have a free evening to play around in the kitchen, this is a great option because while it takes a long time there aren’t any techniques or tricky cooking steps! Plus Kristen does a great job of explaining each step in her blogpost!
